I want to tell you about my sandwich

It was two li'l slabs of tofu that had been marinating for a couple days in mustard, soy sauce, olive oil, garlic, and rosemary, fried up with some baby spinach and all piled between two slices of whole wheat toast.

It was yesterday's dinner.

It. Was. Good.
